Vegan egg steamed in a zucchini
What the heck?? Good question.
I recently saw a video on Instagram where someone did this with chicken eggs and I thought, 'hey, I could make that using my vegan fried egg recipe'. I was quite surprised that it worked first time, and even more surprised by how delicious it was!
I sliced it into dunkable pieces and served them cold with soy sauce (plus chili, garlic, ginger), similar to the original video. Note that the dipping sauce benefits HUGELY from a day in the fridge. Then all the flavours can infuse into the soy sauce. Delish!
How to make it
This one’s not so much a recipe as an experiment. But if you’re interested in recreating it, I’ve got a reel on Instagram that shows exactly how I did it.
This experiment uses my recipe for a vegan fried egg, in exactly the same measurements. One benefit of this zucchini version is you don’t need a silicone mould, unlike in my fried egg recipe.
